Dark Chocolate Ganache Roll

This recipe is very simple, easy and so incredibly divinely rich you'll think you died and went to chocolate heaven! I strongly recommend you serve this with plain unsweetened yoghurt to cut through the beautiful sweet richness of this roll.

Dark Chocolate Ganache Roll

Ingredients:

5 Eggs, separated
4 ½ oz Castor Sugar
7 oz
75ml Warm Water
2 cups Dark Chocolate Ganache

Method:

1. Grease and line an 8”x12” baking tin and sprinkle with a little castor sugar
2. Preheat the oven to 400F
3. Combine the egg yolks and sugar with a mixer until light and creamy
4. Melt the chocolate over a double boiler or carefully in the microwave
5. Beat the egg whites in a clean dry bowl until it forms stiff peaks
6. Fold the melted chocolate into the yolk mixture
7. Stir one tablespoon of the egg whites into the chocolate mix, then gently fold in the rest of the whites
8. Place in the oven for 12-15 minutes
9. Remove the cake from the tin and cover with a tea towel to keep moist while cooling
10. Whizz 1 ½ cups of the ganache in a food processor until its light and fluffy (5-10mins)
11. Smother 2/3 of the cake with ½ of the whipped ganache
12. Roll the cake starting from the ganache covered end
13. Place the roll on your serving dish and smother the outside of the roll with the remaining whipped ganache
14. Drizzle the melted ganache over the roll

Serve at room temperature with plain unsweetened yoghurt
